Great American Railway (Chicago to San Francisco).
Dar es Salaam to Cape Town (including the famous Shosholoza Meyl from Johannesburg).
Glacier Express from Zermatt to St. Moritz (7.5 hours with 291 bridges and 91 tunnels).
Sarajevo-Mostar-Ploce train (with viaducts along and over the Neretva river).
Semmering railway (Gloggnitz-Murzzeschlag) (the worlds first mountain railway).
Bergensbanen (Bergen-Voss-Hoenefoss(-Oslo)) (Voted world top 10 by Chicago Tribune).

By ship:
Across the Atlantic Ocean, possibly on the Atlantic Crossing Rally (ARC).
Through the Eastern Carribean, from Trinidad and Tobago to Saint Juan.
From the Panama Canal to the Galapagos Islands.
From Sydney to Hobart in the famous Sydney-Hobart Race, or much more likely the other way back to Sydney.

By other means:
Around in Svalbard and/or Greenland by dog sledge.
Skiing across from Chamonix to Zermatt.
